Victorinox is one of the largest producers of cutlery in the world today. That cutlery has been distributed exclusively in the United States to culinary professionals since 1884 under the brand name R.H. Forschner.
Forschner knives are some of the best quality that is made, and are at a very reasonable price. The knives are basically made in 4 different categories. The commercial grade is used in large hotels, large supermarkets and meat packing plants. The typically have a synthetic(Fibrox) slip resistant handle and most are NSF rated. The 2nd category has the same metal as the commercial grade, but have Rosewood handles for home use. The 3rd category is the Forged, full tang knives that would be used if entertaining. The 4th category is those with the Microban Antimicrobial Protection. These appear to look much like the commercial grade, but have the protection against bacteria, mold, and fungus. These are also NSF rated.
The commercial grade is the most popular seller and is also the cheapest of the 4 grades. The Microban is slightly more expensive, but because the handles are a dark blue, some customers prefer the commercial grade. The wood handles grade is more expensive than the commercial or the Microban grade, but less expensive than the forged.
Not all of the products produced and sold by Forschner are manufactured in Switzerland. For some time, some of the products were made in Germany, France, and Sheffield, England. In the last couple of years, they have been shipping products made in Japan, and most recently, some made in China to the R.H. Forschner specifications. All of their products carry the Forschner warranty. If there is a problem with one of their products, customer are to call the Consumer Department at 800-442-2706.
Since there are over 600 total products that are sold by Forschner, it is not
practical to stock all their items. I tend to stock the most popular selling
knives and special order anything that customers desire. The knives kept in stock
